VINEGAR BALSAMIC D. INFANTE   Vinegars elaborated using the traditional balsamic method of Modena, starting from  cooked wort until its caramelization and mixed with wines from previous vintages, all of  Zalema grapes, this mixture undergoes a slow acceptance in oak and chestnut vessels  until reaching the 6 acetic degrees and the desired aromas and bouquet, are presented  to the market with 50, 25 and 15 years of age.
